Had a great time last night at Stage AE for the Flogging Molly show!  It was a nice evening out, much closer to home than the last Flogging Molly show that we had to drive to Cleveland for, and we didn’t wait too long to buy tickets this time.  (Last time, we waited too long & it sold out!)  After arriving home from work, Bethany & I headed to Dormont Dogs for a nice quick meal.  (I had the Connecticut Ave. dog minus the onions, it was fantastic!)  We then battled and easily defeated the tunnel monster on the way to the north shore.

We got there early, because I’m generally OCD about getting to shows early.  We lined up outside behind the mob of green & black T-shirts peppered with the occasional tartan patterned kilt or someone who didn’t get the memo about wearing green to a Celtic punk rock show.  There were more people than I had expected.  It was windy, but not unbearable.  We were entertained by the 3 or 4 scalpers passing by asking for extra tickets.  One guy had his leg in some sort of brace or cast, and one guy was on a bike.  They mustn’t have scored any, because I didn’t see anyone selling them.

This was sadly the first time I’ve seen a show with the big room opened up.  I need to get to more shows down there.  (The 1st time I was there was to see Dethlehem and they were on the smaller bar stage.)  It’s a fantastic venue.  You have a nice view all around.  The only thing I’d change is having the floor slightly sloped… but then again I’m just short.  After getting a superficial pat-down at the door, we stopped & said hi to Jeff who was working & not setting any fires.  Then we made our way to the bar where I got a Killian’s Irish Red because I can’t really take too much Guinness.  The wife opted for water.  At a Flogging Molly show?  Water?  She must be the more responsible half.

We joined the pack of Yinzers crowding the merch table as we tried to get a look and get up front.  It was easy to see that the dude wasn’t taking orders from any other dudes… so my wife ordered our shirts and a patch once we squeezed our way to the front.  As I was getting a dollar out of my wallet to pop into the tip bucket, it fell into my beer.  So, dude got a soggy dollar & a dry dollar.  Sorry.  Not that sorry though.  You can still spend it.  I picked up a Devil Makes Three CD too.  I saw them online & liked what I heard.  I asked the merch guy which one he suggested.  He showed me the 1st album & the live one.  He seemed to indicate that the live one was a nice cross-section, so I went with that.

To the floor!  It was still relatively easy to make our way to the center & almost front of the floor.  Things were starting to pack in as we got there, it was pretty good timing & placement. We thought.  Bethany thought she smelled a skunk, and we were too far away from the obligatory dreadlock kid for it to be Patchouli & BO, so it was most likely the extremely pungent weed that we were smelling burning much later. (I bet area Taco Bell locations had a surge of customers after the show.) Our friend Laurel made a last-minute decision to come to the show, so she joined us right as the lights went down…

The Brothers of Brazil were up first.  Imagine a young Fred Schneider (or Michale Ian Black) on guitar and Billy Idol (or maybe even Johnny Rotten) on drums.  These dudes were quite interesting.  The guitar-work was amazing, & the drummer was quite the showman & very entertaining.  They had this weird samba punk rock vibe… it was odd.  I’d see them again.  I dunno if I’d buy an album.  It was fantastic that they opened & closed with a theme song.  I believe these dudes will do well for themselves.  I don’t think Bethany & Laurel were as amused as I was.

Up next was The Devil Makes Three.  The crowd stated getting a little more packed in, and a drunken kid beside me ruined the first 2 songs by slurredly “singing” loudly & off-key directly into my ear, until he decided that the crowd wasn’t as into it as he was, and muttered something about us being lame & pushing forward.  These dudes rocked quietly, but they play really well.  They have great melodies & harmonies… even though they were minus their regular bass player.  I have no idea what to call it. Is it folk? Alt country? Blues? Punk? It’s close-to-but-not bluegrass or rockabilly.  All I know is that I like it.  I’m gonna say if you like punk rock, Johnny Cash, Willie Nelson, or old folk or blues stuff… you ought to check these cats out.  They win the award for coolest guitars too.  Cooper McBean played a mean-looking old archtop with what I think was a P-90 mounted in it.  it looked like it had been left out in a sandstorm after someone dumped some paint-thinner on it.  I wanted it.  He mainly rocked the banjo & a tenor banjo.  The lyrics are great.  Check out this comic set to the lyrics of the song “The Bullet”.  I will see this band next time they’re in town!  Bethany really dug them too, being a country fan and all.  I think Laurel was trying to figure them out.

Well, we enjoyed the part of the set that wasn’t ruined by belligerent drunken meat-heads.  Starting at about the same time as The Devil Makes Three, the crowd directly behind us was swaying & getting rowdy.  Oh well, it’s a concert. We’re in the middle of the floor. That’s what happens. Until these testoster-tools behind us start arguing about something.  I heard something about touching or talking to a sister. I’m not sure. Maybe they were bumping into each other, maybe someone was trying to bump uglies. I was trying to pay attention to the blisteringly talented  band on stage. There was arguing, shoving, and a guy getting in the middle. Somebody’s “bro” got in the middle and then calmed things down.  Security was eying them and pointing flashlights from the ramps on the side, but apparently not responding.  Then everything was “cool” and it remained calm, for a song or two anyway.  All of a sudden I hear “oh my god!” and my wife is on the floor on her ass.  I pulled her up and swung around and yelled something to the effect of “Who the [expletive] knocked my wife on to the [expletive] floor?”  Two dudes larger than me in height and girth (one in a kilt as well as a drunken stupor) looked at me with an expression that can only be descried as “oh shit”.  I turned around to ask Bethany if she was OK.  She nodded.  I swung back around to the now large gap in the crowd surrounding the two sweaty ass-clowns and demanded that they apologize to Bethany. They did, looking like a dog that just took a dump on the living room floor, as security arrived to further scold them and ask me if Bethany was OK. Next time how about responding before a bystander gets knocked over?  I guess she saw one dingleberry trying to choke the other dingleberry as she got knocked down.  I would expect this kind of crap at a metal show, but for folk punk?  Way to uphold drunken Irish fighting stereotypes, McPotatoheads.  I don’t know if I would have punched those guys, or what… but apparently my tone of voice or the look on my face told them not to mess with me.  I thought security was going to drag me into it too as he was asking if Bethany was OK.  Later Laurel laughed as she said she thought I was going to swing & she’d end up jumping on the fat guy & throwing punches too.  Maybe we’re all a little too violent?

Finally, it was time for Flogging Molly!  Despite all of the drunken violence, the smell of burning leaves in the non-smoking venue, the guy in front of me repeatedly backing himself into my junk, getting sweat on me from the shirtless guy, and paying $12 for parking, we were having one hell of a great time!

If you’ve never seen Flogging Molly in action, I’m not sure how to describe it.  Seven people come on to the stage and sound like 70.  The crowd really started moving so I pushed Bethany & myself forward & off to the side as we lost Laurel with the first wave.  She found us not too long after that.  Dave King & company ripped through a bunch of hits & some stuff that they don’t regularly do live.  I remember it being a long set & how I liked every selection.  I could have watched them go for many more songs, even after the encore.  I can’t pick a favorite track, I like so many of them.  I really enjoyed “What’s Left of the Flag”, “If I Ever Leave This World Alive”, “Float”, & “The Son Never Shines (on Closed Doors)”, & of course “7 Deadly Sins”.  The inter-song banter keeps things light with songs that can have such heavy lyrical matter all the while to a happy beat.  You get the feeling that they’re all playing right from the heart.  You have this killer group of musicians that can probably between them master any instrument you might have lying around.  Dennis Casey has his hands full trying to compete with & leave room for all of the other instruments.  I was glad he got a spot for a guitar solo of sorts, in with the Guinness chug.  Every time I see a Celtic punk band, I get the urge to buy a Telecaster.  At any rate, Flogging Molly did not disappoint.  We’ll see them next time they’re in the ‘Burgh, Cleveland, or anywhere else nearby.  I know Bethany loved it, I think Laurel did too.  After the show, we ran into my cousin Patience.  Taste in awesome Irish music must run in the family.

♡ Happy Birthday Bethany! ♡


Generally I blog about goofy stuff except for food allergies, and not much here takes a serious tone.  If you’re reading this, I assume you already know that.  A bunch has been going on with life lately, we’ve been through a whirlwind of ups & downs as things get increasingly hectic.  I’ll spare you the details as my good friends & family probably already know all the stuff we have going on anyway.  At any rate, that’s not the focus of this blog any way… it’s just the spark behind it.

The focus of this one is my wife, Bethany.  Her Birthday is today, and with it approaching while we have many other things going on… I didn’t want it to get lost in the shuffle.  I decided to make note and wish her a happy birthday here.  (Someone might have to tell her about this… I don’t think she reads it much because she hears most of my ranting live without the added benefit of a filter.)

Archery Camp 1997We’ve known each other for many many years and originally there was not even a remote spark of interest.  We have a wide age gap, and I was a counselor when she was a camper at our church camp, Living Waters.  I’m sure we talked, joked, and laughed… I even helped instruct her in Archery.  Sadly for the reader, nothing creepy was going on.

Many years later we went to dinner at Ritter’s as old friends catching up (thanks to AIM of all things), and something sparked there.  We generally don’t have much in common.  We have wildly different personalities.  We go together perfectly.

Beans N' CheeseI’m glad I have found my other half.  We like to laugh, and goof around with each other.  We meet on common ground where things are important.  Neither of us sleeps well when the other isn’t in the bed.  We do enjoy cooking together, entertaining, road trips, Flogging Molly, the RamonesJohnny Cash, & Willie Nelson.  I got her quoting Star Wars, she has me inexplicably interested in Glee.  We both like antiques, have an appreciation for the history of things.

We both have large & close extended families.  We all fit in all around.  That’s important to both of us.  We’re both still actively involved with camp, it’s a very special place to us on many levels any more.  We learn more about each other & ourselves with each passing year.

Bethany has brought out my sensitive side and I have given her a healthy dose of geekery & anarchy.  I’m proud of her for going to school and advancing her career.  I’m in awe of how she works with her special needs campers during recreation camp in the summer.  It takes incredible amounts of patience and mental strength.

She supports my crazy punk rock band, guitar acquisition habit, Batman & Star Wars obsessions, and puts up with lots of the History Channel and Discovery Channel.  She looks out for me with my crazy shellfish allergy, and takes care of me whenever I’m not feeling well or even if I’m just having a bad day.  She has gotten over rolling her eyes at my skull coffee mug.

So to Bethany, my wife & best friend, I want to say Happy Birthday!  I also want to tell you how much I love you and how glad I am that we are who we are.  I am a better man for for knowing & marrying you.  You are my favorite, and I’m glad we found each other.

I can’t wait to make stuffing again. It’s ridiculously tasty. I love the carb overload. Maybe I will get those goggles, and I need to pick up some Yuengling.  A week from tonight, I should be in the process of creating this awesomeness.

How do you do it?

Maybe this year, I’ll try to make some Potato Filling too.  There are a bunch of recipes for it out there.  Maybe stuffing balls would be good…  Now I’m hungry.

For me personally, as far as food allergies go… just raising awareness of the seriousness and validity of serious food allergies is as important as research for a cure.  People need to realize that it’s a growing concern, and it will need to be addressed more and more in schools, restaurants, grocery stores, and homes everywhere.

The Creepy Mrs. Claus


So, on Friday, we boxed up the fall decorations, took ‘em to the basement, and brought up the Christmas decorations. My wife, Bethany, put out most of the smaller decorations that go around the apartment, we’ll probably do the tree and maybe some outside lights by the end of the week.

As I was laying on the couch Friday night while we were watching TV… I felt like I was being watched. I was! There was a creepy set of tiny gnome-like yes staring right through me from the coffee table.

It was a tiny eerie Mrs. Claus salt (or pepper) shaker. It must be a set… no idea where they’re from. Mr’s Claus’ apron actually even looks like it was melted a little at one point in time. Perhaps she was stored in a hot attic, near some warm holiday lights, or near a radiator?

So, I did what any normal person would do (I hope)… and I turned the creepy little thing so it was no longer facing me.

Bethany erupted in a fit of laughter, because I was obviously disturbed by a tiny inanimate object.

Saturday morning, I stepped into the shower stall, and Mrs. Claus was eight there on top of the shampoo dispenser looking right at my naked figure.

Game on. Bethany wins the first round.

Needless to say, Mrs. Claus was all over the house this weekend.

We’ve played this game before with empty toilet paper rolls… because someone refuses to change them when they’re done, and just sets a new roll on the window sill. Not naming anyone here, I’m just sayin’. They’ve ended up in pillowcases, in the freezer, in the car… you name it.

This morning, I used my cell phone to capture an image of the disturbing little holiday figurine, Photobucket to save it, paint.NET to crop it, and then I emailed it to my wife’s Yahoo!, Hotmail, & Work email addresses, and her phone.

Not sure where to go next… but I thought I’d share the creepy Mrs. Claus image, in case you had anyone that you wanted to creep-out.

Maybe I’ll eventually have to get a better photo with the camera. This one’s a little blurry.

Stuffing Recipe – Thanksgiving 2009


Stuffing has got to be my favorite Thanksgiving food.  I remember Thanksgivings past where my dad & I would fight over the stuffing bowl like it was filled with gold, diamonds, and (for me) guitars.  The stuff is perfect.  Alone, with turkey, with gravy… the decadent amount of carbs is ridiculously awesome.

Last year was my first ever attempt at making stuffing… and my grandma told me that it tasted just like hers.  Is there a compliment better than that?  I had used as a guide an old recipe that my grandfather & grandmother had both used when making holiday meals.  My mom lent me the old cook book with my grandfather’s notes last year, I collected some others, and I made scans for myself.

I say “guide” because it’s not always an exact science when doubling/tripling recipes… and there really aren’t any cooking directions… it’s just a guide to make the stuff.  Also, I tend to do a lot of “oh, that looks about right” and a little bit of “hey, let’s add a little of this” in the kitchen, as most people comfortable there usually do.

A lot of times I see stuffing recipes online, on TV, or in the little books by the cash register at the grocery store… and they include sausage, apples, raisins, (yuck!) nuts, or even peppers, carrots, or mushrooms (all of the latter of which I’ like to try some time).  The philosophy behind this recipe seems to be a K.I.S.S. one.  I like that.  It’s a very simple accompaniment, and the taste that my mind goes to every time I think “stuffing”.

This year, it was definitely a two person effort.  I don’t know how I would have done it without Bethany and all four of our hands.  We made a lot of stuffing.  Sadly, I didn’t think to chronicle the thing with photos like I sometimes do with new recipes… but I did want to make a guide with my own notes, so when I do this next year, I remember what I did differently this year.  I know I altered things slightly last year, but the details were a little fuzzy.  I figured that if I’m going to do it for myself, I might as well share, right?  Plus, we got compliments from two moms, two grandmas, and an aunt… all excellent in the kitchen themselves!

I did take a photo today, because really, what’s a food blog post without a photo?  Perhaps I’ll see if my mom got any with her camera and amend the post later.

Thanksgiving Stuffing 2009

This year's effort was delicious, if I do say so myself.

This is my first time really writing out a recipe… so pardon me if it’s a little convoluted or long winded.  I don’t want to miss anything, and I hope to get it all in the right order as well as make it an entertaining read.

Here’s what you’ll need to do it the same way I did…

Food:

  • 5 loaves of bread (equaled 56 cups once cubed)
  • 1 bundle of celery (3 cups, chopped – the rest can cook w/ the turkey or be a snack)
  • 2 Spanish or Sweet onions
  • The giblets & neck out of your turkey.
  • 1 can (14½ oz.) vegetable broth
  • 1 tablespoons of salt
  • ½ tablesppon Season All Seasoned Salt
  • 1 heaping teaspoon coarse ground black pepper
  • 1 heaping teaspoon sage
  • 1 heaping teaspoon poultry seasoning
  • 10 eggs
  • 4 sticks (2 cups) butter
  • some water
  • 1 cup fresh parsley
  • 1 bottle of Yuengling

Stuff:

  • 2 cookie sheets
  • cutting boards
  • small pot
  • electric skillet
  • Magic Bullet®
  • electric roaster
  • large crock pot
  • knives
  • a few large bowls
  • whisk
  • spatula
  • several large spoons
  • paper towels

OK, on to the directions…

  1. Monday night, get your loaves of bread, open the bags, and put the loaves on cookie sheets before dinner.  Leave ‘em out on a table or counter while you do your thing.
  2. Right before your favorite prime time TV shows come on, set up a station on the coffee table in front of the couch with the cookie trays of bread, some cutting boards with knives, and the pans out of your electric roaster.  Cube the bread and fill the roasting pan.  When I say fill it, I mean fill it.  It will be ridiculously full.
  3. Cover it with paper towels, and set it on the kitchen table that you only use when company comes over anyway.  Over the next few days, stir it a few times a day, whenever you think of it.  This will get it nicely & slightly stale.  If you’re going to be doing anything that smells, like using cleaning chemicals, put it in the oven… but don’t turn it on.  It’s nice & warm & dry & not stinky in there.  The bread will absorb that stuff and the stuffing will taste like Mr. Clean made it.
  4. Wednesday night, get out your turkey… and pull the disgusting papery bag of giblets out of the neck cavity, and the neck out of its butt.  (Why exactly do they put the neck in the butt, anyway?  Who’s idea was that?) Boil the giblets in your can of vegetable broth, or just use plain water… or even turkey or chicken broth.  I thought the vegetable broth would add a nice flavor.  I boiled them for a nice long time, and let it cook down quite a bunch.
  5. Finely chop up your celery & onions… or use the Magic Bullet, like I did.  I’m not real big on chunks of slimy or crunchy stuff in bread-like consistency foods.  I probably had half of each chopped finely, the other half rendered to near-paste by the genius little piece of equipment that list the Magic Bullet.  I’m sure any food processor would work.. but this one is easy to pot pout of storage, use, and clean when you’re done.
  6. Then I popped out the electric skillet to sauteé the onion & celery mixture… probably in some Country Crock & a bit of extra virgin olive oil… adding some of the spices mentioned above, and maybe even some paprika… although, they don’t come the totals listed above.  These are the aforementioned “oh, that looks about right” and  “hey, let’s add a little of this”.  You’ve sauteed stuff, you know how it works.  I love this step because it turns the onions from gross into awesome… especially the Spanish onions.  The sweet onions are oddly enough not as sweet to me when cooked.
  7. Next time, I’m totally getting a pair of swimming goggles or those glasses that I’ve seen at Bed, Bath & Beyond for when I chop & pulverize the onions.  I was crying like a little girl who just watched a car run over a kitten.
  8. I popped the onions and celery into separate containers for the ‘fridge to save for Thursday morning.
  9. Next, I pulled out the giblets and chopped them into tiny pieces, & put them with the reduced broth from cooking into a 3rd refrigerator bound container to be used on Thursday morning.
  10. Go to bed.  You have to get up early.
  11. Thursday get up about an hour before your turkey needs to go in the roaster oven, and start to mix all this crap together.
  12. Add the dry spice ingredients to the now stale-ish cubed bread.  Good luck not getting any on the floor.
  13. Chop the fresh parsley.
  14. Nuke your butter in a microwave safe bowl, add it to a large mixing bowl, crack open the 10 eggs, and whisk away.
  15. Add the fresh parsley to the buttery gooey egg mixture.
  16. Add 2-3 cups of the broth from the giblets, and the finely chopped giblets to the now even gooier butterier egg mixture.
  17. This is where I got the bright idea to dump in some Yuengling.  It wasn’t a whole bottle… but I had it out & only needed about ½ cup for my butter/garlic/beer turkey injection/baste,  so I dumped some into the gooey buttery gibletey mixture, and drank the rest… all before 8:00 am.
  18. Dump the celery & onion concoction on to the bread, mix around, and then dump on the gooey buttery gibletey Yuenglingey mixture.  This is where it was imperative that there were two of us.  Bethany opted to use her hands to mix while I poured.  The mixing gets easier when it’s wet, as it goes down a little.  You should probably wash your hands before you do this.  Not that I think you’re stupid or anything… but there are signs out there all over the place… so someone somewhere must need reminded.  Use soap, and hot water.
  19. Now, this needs to come out of the roaster so the turkey can go into it… and you should be doing this around the same time as turkey prep… so stuff what you can into the turkey carcass’ various cavities, and put the rest in the crock pot.  I had Bethany scoop it into a bowl small amounts at a time as I stuffed it into the bird, so I wasn’t touching raw poultry and the stuffing that wasn’t going into the bird.  She made it clear that she wasn’t touching the raw dead bird, or sticking her hands into it.
  20. I sewed up the turkey and popped it into the roaster to cook, and then put the stuffing in the crock pot on low to cook for the same amount of time.

Everyone told me last year that stuffing + crock pot = bad idea.  This is where I say that you could not be more wrong.  It was perfectly moist and heated well throughout.  I did break the cardinal cock pot rule by removing the lid every hour or so and stirring a little so it didn’t stick to the sides or burn.  This worked well, except that I didn’t get the bottom well enough.  You could add more liquid throughout if t looked necessary… or not stir if you like the crusty part as much as the other part.  If you use the crock pot enough, you get to know what works for yours.  Pop it on to warm or off a while before you eat.
  22. When the turkey’s ready, the stuffing’s ready.  Stuff yourself silly, send people home with leftovers, and eat for breakfast, lunch, & dinner the next day.

Well, I hope you enjoyed the process, and I’m sorry for jumping tenses.  I think I did anyway.  All over the place.  Maybe Dave and Kristin can give me some pointers on that.

Senator Wayne Fontana Reads His Mail.


I had posted the following on my Facebook page and PittsburghBeat.com while ago, and wasn’t really sure if I’d get a response. Enough people seemed to be entertained by it, that I thought it did its job. Today, I got a letter in the mail from Senator Wayne Fontana. It’s also following the following.


So, tonight the doorbell rings… Bethany answers, and it’s a young woman from Clean Water Action. The girl at the door proceeds tell Bethany that she’s out raising support to clean up our waterways, and that if we like clean drinking water we ought to sign this petition.

Bethany signed after the girl at the door pointed to some bulleted talking points on her clipboard saying pollution is bad, and she then asked for a donation. Bethany, agreeing that clean water is good (and just wanting the girl to go away) gave her a check for $5.

The young lady at the door was very polite, and probably out for a good cause that she believes in wholeheartedly. I applaud her conviction and dedication.

Then, Bethany was given the following pamphlet and asked to write a letter to PA State Senator Wayne Fontana and leave it out on the porch for the young woman to pick up on her way back through in about a half hour.

The young political activist even handed Bethany a blank sheet of paper on which to write the letter. I found this very considerate.

Bethany sat down, perplexed at what to write. It’s hard to write a letter about an issue that you’ve just learned of minutes ago, mere seconds of those minutes being devoted to actually explaining the issue. She considered aloud just copying the text outlined in the “Tell Them” section of the handout and singing her name, and laughed.

You all know I like to write letters, so I happily offered to write in her stead.

I wrote:
Dear Senator Fontana,

My wife was asked to write this letter by a door-to-door political solicitor about an issue that was explained to her in less than 30 seconds with talking points laid out that (of course) over-simplify some situation about clean water initiatives.

She was asked to donate money to their cause, which she did, under duress.

I do not support their cause, and most likely their proposed bill includes some kind of legislation that will take property out of private hands for government use, or raise our taxes.

I’m sure there’s something that we’re not being told, or some sort of political affiliation or philosophy that’s not anything like mine behind this agenda.

Do I want clean water? Of course I do. Do I want anything else these people are pushing for? Probably not.

Perhaps a bigger issue to tackle would be to pass laws saying that people can’t solicit political issues door to door.

So, in closing, I apologize for wasting your time, my time, this envelope, a stamp, this ink, and this paper. I’m sure a Prius-driving sandal & socks wearing liberal is crying somewhere at my waste of precious resources.

We addressed it to Sen. Fontana, placed it in a sealed envelope, stamped it, and placed it on the porch for pickup by the young activist.

I do hope to get some sort of reply. Thanks to that woman for prompting this action, and for delivering my important message to the senator.

I think it’s awesome that the senator took the time to not only read my letter, but also to form a well-thought-out response.  This certainly does not appear to be a standard reply letter, and it’s good to know that others feel the same way.  Maybe something does get done by writing to your local politicians.

The last paragraph may not be what I needed to hear.
