How yinz make your chili? 🌶 [Chili à la AiXeLsyD “Recipes”] 🌶


Yinz like chili?  I do.  I haven’t made any for a long time.  I may need to change that.  I stole this (& modified it) from my never-used Cookpendium blog.  My writing has hopefully improved since then.  Maybe not.  I like a tamer chili that would appeal to a wide variety of people to add heat as they like.  I like it thick enough to make a spoon stand.  I can take or leave the beans, and I reject your debatable elitist visions of chili or what it ought to be.

I ought to try and make a new batch using only stuff I buy at Aldi.

How do you make yours?

Recipe 1:

I’ve never made chili before, and in researching, I came across 50 billion recipes. So, this morning I made my own in the crock pot…

  • 2 cans of condensed tomato soup
  • 1 can of tomato paste
  • 1 packet of chili mix
  • about ½ cup of water
  • 1 tsp. of beef bullion
  • 1 can light red kidney beans
  • however much ground meat was leftover from last night
  • 1 tsp. cumin
  • 1 tsp. black pepper
  • a dash of cayenne pepper
  • a dash of paprika
  • a dash of garlic

…and I slapped it into the crock pot on low for 8 hours.

Hope it tastes good when I get home. I’ve got shredded cheddar cheese for the top of it, & Super-Pretzels to go along with it. They always served pretzels & chili in my elementary school cafeteria so they belong together in my warped mind.

Most of them use tomato paste, soup, sauce, juice, or diced tomatoes as a base… I even saw one that called for Spicy hot V8… and I think my mom always used soup. Tomato paste is usually bitter, so I figured the tomato soup would counteract it. All of the spices should be rockin’. I like my chili thick.

Oh yeah, about 1/2 the ground meat was cooked w/ some seasoning salt & A1.


Recipe 2:

Here’s what basically went into my chili. I’ll probably eventually make a blog about it with a narrative so I can remember what I did this time for next time… to see what I wanna change or what I wanna do again.

I ended up only using the one can of diced tomatoes (the one with jalapeños) and still kind’ve overflowed the pot by a small amount. So, next time I may cut out one can of tomato soup or a can of beans. Also, I want to try garbanzo beans in my next batch… and I’ve heard chocolate powder goes good in chili some times… so I wanna try that one day too.

I also tossed in 2 slices of Velveeta ripped apart, a dash of spicy brown mustard, and a drop or 2 of A1 Cracked Peppercorn Steak Sauce.

I think the meat that I used was too fatty or I didn’t drain enough fat (…even though I got a about ⅔ of a regular sized plastic cup full of fat out of it). I had to skim some excess grease off of the top when I popped it open this morning.

I’ll let you know the general consensus after it’s been consumed.

Nothing kills holiday cheer faster than when someone offers you Christmas cookies; you gleefully accept and are presented with a tray covered in little jelly-filled things, lemon bars, and crap with nuts or coconuts all over it.

“Cookies” implies deliciousness, like chocolate chip, Hershey’s Kiss or Reese’s Peanut Butter Cup cookies, peanut butter cookies (fork-pressed cross-hatches with no chunks of nuts), Rice Krispies treats (in any iteration including chocolate and peanut butter shenanigans), Christmas wreaths, or even lady-locks or lady-fingers (or whatever you call them).  I’ll even give you buckeyes.

“Cookies” does not include anything with jelly in the middle, anything with nuts on or in it, lemon squares, Fig Newtons, anything with coconut shavings or flavoring.  These are (in a term coined by my friend Saurav I believe) in fact “Dookies.”

Sugar cookies and shortbread are barely passable as cookies. (Sorry, Eat n’ Park.)

Pizelles can be tricky.  Some of them are delicious, and some taste like what I imagine licking the inside of a dumpster in August would be like.  If you use a spice called annis that sounds almost like anus, you get what you deserve.

Chocolate covered pretzels, Oreos, peanut butter crackers, etc. are acceptable.

Red licorice is OK, black licorice is not.

Thumbprints can be tricky too.  If they have chocolate icing, usually only the icing is edible.  The rest is tasteless powder formed into a cup of lies.

Do we need someone to make a flow chart?  Are you getting this?  Don’t ruin someone’s Christmas by offering cookies when you’re presenting dookies.

This year, we’ll have 3 bowls of treats for Halloween.  We’ll have the traditional chocolate gooey goodness, a bowl of peanut/tree-nut free treats, and a bowl entirely made up of non-food party favor-ish goodies.

Why?  Why not?  I was able to pick up a bunch of party favors at the Dollar Tree, and my wife Bethany got some Halloween themed stuff from Target.  The no-nuts candy wasn’t a big deal either, all we had to do was read the label… which we’re used to.  Even the extra bowl was only $1.  It wasn’t a whole lot of effort or money.

Even painting a foam pumpkin teal for use for years to come wasn’t a big deal, or printing the posters from the FARE website.  Oh yeah, I forgot to mention that.  This is a movement.  It started with some of the most kick-ass people on the planet, food allergy moms in Tennessee.

My point, I guess, is that it isn’t a lot of effort but it can be a big huge gigantic deal for a kid.  What’s a big deal?  To feel included on a holiday where you’re hyper aware that you’re different.  To know that this piece of candy doesn’t contain nuts or wasn’t “processed in a facility that may also use peanuts or tree nuts.”  To know that if you’re allergic to dairy or chocolate or just about everything that everyone else can eat or isn’t one of the top 8, but this little trinket or toy (or 2 or 3 if you’re at our house) is all yours.  To know that you don’t have to go home & “trade up” for safe candy on this one.  To know that your parents didn’t have to drop off a safe treat with all the neighbors ahead of time, and that someone else “gets” it.

I always liked getting those Little Hugs drinks (which may be a safe treat), but some people would complain about the weight.  That would have been gone by the time I got back to the road when I was a kid.  Then again, times have changed.  When I was a kid, we had to play the “guess who you are” game.  If I asked a kid his name now, the next ring of the doorbell would probably be the local police.  Also, kids… always let your parents check your candy for razor blades or syringes.

Like I said, we read labels.  Luckily shellfish is generally easy form me to avoid in packaged foods, slightly less so in restaurants.  Our little girl Molly can’t do eggs.  Well, she can do eggs baked into things, but has to avoid straight up eggs, mayonnaise, some mustards, custard, and we just noticed… Mallow Cups?  (I hate them, they are the devil’s candy.  The wife loves them though… even though it tastes like someone replaced the inside of a Reese’s Peanut Butter Cup with sunscreen.)  Will we have to avoid meringue too?  Who knows?  Hopefully she outgrow her allergy, I’ll never get over mine without some kind of cure.

There are many others out there going through the same thing.  We can stick together, and support each other.  We can ask those without any food allergies to support us too.  Spreading awareness is the key to keeping us all safe.  So, take a few minutes to learn about the #TealPumpkinProject.  Use the hashtag on social media (Twitter, Instagram, Facebook, Google+, Pinterest, Tumblr, etc.), get a pumpkin and paint it teal, and/or print out the fliers.  Get some safe treats.

I’m writing to ask you what happened.  Occasionally I get an email reminding me to visit a Krispy Kreme, and I think to myself “yeah, that’s a good idea.”  Sadly, there are no Krispy Kremes around any more.  I remember the stir of excitement when you first came to the area many years ago.  I believe it was even a news story… “Pittsburgh is getting Krispy Kreme!”  The fervor for hot fresh donuts was palpable.  The neon sign beckoning me in for a visit worked on several occasions when I wasn’t even craving donuts.  I’d generally come in to buy a Boston cream donut & an iced tea or chocolate milk… all because of that glowing invitation.  I always loved the retro decor, the smell, and the ability to see the magical doughnut making process.  You quickly dispatched with local competition.  Dunkin Donuts most decidedly took a hit, and you wiped out some of the local weird places like Donut Connetcion and Mister Donut.

Then, you pulled out like an occupying force ordered home.  There’s hardly a trace of Krispy Kreme left in Southwestern Pennsylvania.  I’ve noticed a lot of area locations like Greensburg, Pleasant Hills, and Monroeville are now Chick-fil-A restaurants, and a still-empty Krispy Kreme building sits as a shell of sadness in Robinson Township.  I remember the “remodeling / be back soon” sign hung for years before someone just gave up.  I mean, I absolutely love all the full service Chick-fil-A locations, but I also like hot fresh donuts every once in a while.  You used to be in several Sheetz locations, but now I think they mostly receive their donuts from somewhere else.  Plus, they’re not exactly hot n’ fresh there.

Remaining on your email list has become simply receiving an occasional taunt for something I can’t have.  Perhaps I should unsubscribe?

Dunkin Donuts seems to be making a rebound, and I must confess that I find their Boston cream (Boston creme?) offering to be a much fuller, larger, and more satisfying confectionery treat.  But, they don’t lure me in with a hot fresh free delicious donut, and I can’t watch them being made.  (Is it doughnut, or donut?) There’s also a killer “mom n’ pop” donut shop that’s a bit of a hike for me, but worth the trip… Big Daddy’s Donuts.

The truth is… I miss you, Krispy Kreme.  Do you have plans to come back to the area with hot fresh goodness?  Are you going to make me drive all the way to Washington county to get a doughnut & take a chance on the hot light being on?  Why did all of the area locations shut down?  Were you muscled out by local donut barons?  Did too many yinzers line up for free doughnuts and not actually buy anything?  Did Sheetz want too much too soon?  Did people go on diets or realize that too many donuts are a bad thing?  Was you plan all along to wipe out local donut shops and leave the area starved of donuts because of the high geographical rate of diabetes, thus ensuring better health for the population of the Pittsburgh area?  I need (and feel that I deserve) some answers, my friends.  What happened?  Please don’t brush me off with the standard, “it’s not you, it’s us.”  I need some concrete reasons.

Krispy Kreme glazed donuts.

Doughnuts or Donuts?

I’m still left wondering if “Donut” is a bastardization, like “Late Nite” instead of “Late Night” or “Drive-Thru” instead of “Drive-Through.  If so, why spell doughnut correctly while blatantly (and borderline offensively) misspelling Crispy and Cream with K’s?  (I mean, add one more K in there…)  While we’re at it, is it Creme or Cream?  Are they the same, or different things?  And, isn’t the filling just pudding or is it custard? 

They declined to comment on the wiping out & eventual rebound of their spelling-handicapped competition.  Perhaps a classy move.  Dunkin’ Donuts never replied to that tweet, either.

HOT NOW

You know you want some doughnuts. Come get them. Eat the free one, then buy some more. It's hot, well... warm, and fresh... and you can see some being made. Man, you're hungry for doughnuts.

I don’t believe that Franchisees simply chose to “pursue other business ventures.”  You don’t quit if you’re making money.  You don’t all dry up if there is demand for your product and you’re selling it at a reasonable price.  I find it funny (odd funny not “ha ha” funny) that a lot of the old Krispy Kreme buildings became Chick-fil-A’s.

In fact, I’m not sure if they answered any of my questions directly.  Should I perhaps write back?

Also, tell me in the comments where you get your donuts!  Am I missing some great local shops?  Who has the best donuts?  What’s your favorite donut?  Is it “donut” or “doughnut”?  Let’s talk all things do(ugh)nuts in the comments!

Dunkin’ Donuts on Allergy Signage… [Case# 7577485]


Did you see my allergen warning sign photos from Dunkin’ Donuts and Giant Eagle?  I wrote to both of them to thank them for displaying the signs.  Giant Eagle was the first to reply, and now I’ve heard from Dunkin’ Donuts.  I submitted the following via webform:

As someone who has a severe allergy, I found this to be a responsible and proactive decision on the part of Dunkin’ Donuts, and I just wanted you to know that it’s an appreciated gesture.

Thankfully, my allergy isn’t to peanuts, or I’d most likely go nowhere near your fine establishments, much like I currently avoid Red Lobster and Long John Silver’s due to my shellfish allergy.

I did, as the sign suggested, go to https://www.dunkindonuts.com/aboutus/nutrition/ in order to see allergen information for some of my favorite menu items.

I also see that you have a blanket *.pdf available showing nutrition information for all of your products.  Do you have something like this for allergens in all of your products?

It’s a red flag for me that you have “Crustaceans” on the list, and even expand upon it under the data table with “Crustaceans include, crab, crayfish, lobster, and shrimp.”

Do any of these creepy little sea-bugs show up in any of your products?  My curiosity is piqued, my friends!

Thank you for taking the time to contact Dunkin’ Donuts.
To answer your questions regarding allergens, the stores should have a printed document available behind the counter that will tell you if any of the allergens required to be listed by the FDA are in our products.
If you call our Consumer Care line, they can tell you as well.
As far as the shell fish listing on our forms, that form is required by the FDA. We have to show it on the form but you won’t see it checked off for any of our products.

It’s interesting how people intemperate the laws… I certainly don’t see standardized allergen information on all food-related websites. I’m glad that companies like this are at least trying to be active in their warning, and hope it’s not just a “CYA” measure.

It’s also interesting to note that I received a the same  exact reply to this message at least 13 times, all with the same case/reference number.  Weird.

Giant Eagle on Allergy Signage… [Incident #: 12702111]


So, remember my allergen warning sign photos from Dunkin’ Donuts and Giant Eagle?  I wrote to both of them to thank them for displaying the signs, and Giant Eagle is the first to reply.  I submitted this via webform:

I’d like to thank you for actively posting allergen awareness/warning signage.  Sunday, I came upon this sign above some chocolate chunk (& other) cookies on a display table at the GE in Parkway Center: http://bit.ly/bg09rX

As someone with a severe allergy to shellfish, I appreciate these kinds of signs… but the all-inclusive sign begs the question:  Did these cookies come into contact with any shellfish in the bakery?  I hope not!  I worry enough about the crab cakes & seafood salad in the deli counters!

I’d like to see stores become more active in labeling prepared foods, but this is a a start.  As noted in the comments on my last allergy post, they are currently doing more than required by law… so that’s a good thing.

Allergen Signage


Over the weekend I was at two places where I saw these allergen signs, the Dunkin’ Donuts in Dormont, and the Giant Eagle in Parkway Center.  Generally when I see these signs it makes me happy that the place who’s taking my money is at the very least aware that there are products that they have on the premises that may cause certain people some discomfort or possibly even death.

In viewing the allergen information online as the sign suggests, I’m glad that a glazed donut doesn’t contain any crustaceans, but I may now have to scour the rest of the site to see if anything does.   Ha ha ha.

I gambled yesterday, hoping that the chocolate chunk cookies  I purchased didn’t come into contact with any shellfish in the bakery.  If I died from eating them, according to this sign, it’s my fault.  I was warned, and should have discussed the risks of cross-contamination with my doctor.

You’ll hopefully be glad to know that I’m not dead, and I had a few cookies last night.  Wow, I had poor eating habits this weekend.  Ha ha ha.  Donuts & Cookies.

At any rate, the fact that they simply acknowledge that allergies exist is a great start.  It’s sad, but so many other food-service companies go with the “it’s not our problem” mantra.  I always thought that Five Guys Burgers  & Fries to be very pro-active with their peanut allergy warnings, and I have commented on the Market District in Robinson’s allergen warnings before.

If you suffer from allergies, do these signs make you feel safer, or are they a blanket statement like “No Lifeguard on Duty” or “Park at Your Own Risk”, trying to absolve the poster of any wrongdoing should a mishap occur?

The blanket statement from Giant Eagle seems a little forced, or an afterthought… as I’m sure there aren’t many lobster cookies in the bakery, but then again there just might be.  How am I to know?  Do I just take this sign as a warning to not eat any food that they prepare?  The sign itself is a great thing, but if it were tailored just a little more to the actual product, it might be more comforting.

I know I’m always afraid of the stuff in the deli counter that’s next to the crab cakes or a seafood salad…  I don’t want a pasta salad with death-fish in it.  Yes, that one little glob of death-juice can kill me.  I don’t see any allergen warning signs there where they’d also be appropriate.  But, I don’t want to get down on Giant Eagle.  They are taking steps in the right direction.  Perhaps I’ll even send them a quick email to let them know that as someone who suffers from a severe food allergy, I appreciate the signage.

If you suffer from allergies, have someone in the family that does, or have a friend that blathers incessantly about them (like me), I’d like to hear your thoughts on the signs.  Are they a good thing, or a bad thing?  Are they proactive or defensive?

What if you suffer from one that’s not a “big 8” allergen but also quite prevalent like corn, peppers, or chocolate?

I’m sure you remember my last post about Turner’s with the pretty picture.  I decided to ask Giant Eagle why all of their stores don’t carry Turner’s products…

I’m writing to you today to request that all of your Giant Eagle and Market District Stores carry products from Turner Dairy Farms, Inc.  I know that some locations do already carry Turner’s products, because I’ve written to them trying to track down some of Charlie’s Old Fashioned Buttermilk… and they clued me in to the Giant Eagle in Brentwood.  I know that the Giant Eagle in Murrysville also carries Turner’s Iced Tea.

I’d love it if the Cochran Road, Bridgeville, and Parkway Center locations had Turner’s buttermilk, chip dip, and tea varieties readily available.  I’d add them to my order virtually every time we shop there… much like I do now with the tea when I find myself in Rite Aid on Banksville Road.

I also find it hard to believe that with the myriad of products and name brands available at the new Market District in Robinson… Turner’s is nowhere to be found!  Have you tried the chip dip?  It’s incredible.  It puts the Kraft and B L brands to shame.

You’ll find in the attached photo all of the Turner’s bounty that my wife & I picked up this weekend while just passing by the Brentwood Giant Eagle.  I can assure you, these products would be on every grocery order if available at the Giant Eagle locations where we typically do most of our shopping.  Not only these products, but the raspberry & lime tea… and just about everything that Turner’s offers!  (Sorry, I don’t do diet drinks.)

Thank you for taking the time to write to us regarding Turner Dairy Farms and some of the items that you obviously like as detailed below.

I can understand your frustration related to these items that you feel passionately about not being readily available and convenient to purchase.  However, I must honestly inform you that we don’t have any upcoming plans to carry additional Turner Dairy Farms items at any of our corporately owned Giant Eagle and Market District locations.

We get contacted by customers on a daily/weekly basis requesting us to carry a variety of items from local dairies, and we just cannot support all of these local dairy item requests in our limited dairy cooler space in our stores.  To manage the limited space we have in stores, we try to partner with dairies and vendors that can provide us item programs that accommodate the needs of the majority of our customers.  If we were to carry a representative sample of all the local dairy items that we get contacted about, we would have to eliminate a large portion of our current item mix that a significantly larger customer base demands us to carry and also asks us daily/weekly to expand upon but we cannot as a result of the same limited space challenge.

Sorry I could not give you better news here.  There are a lot of items that I am personally fond of that I have decided to not carry as well due to our limited space and need to satisfy the largest amount of our customers.  In the meantime, some of our independently owned and operated stores such as Brentwood are allowed to carry the Turners Dairy Farms items as you note below.  We allow those owners to have some flexibility in their item mix, and some stores have elected to carry Turners items based on customer demand or geographic proximity to the dairy.

D’oh!  Well, it doesn’t hurt to try, does it?  Apparently Giant Eagle has no intentions of widely carrying Turner’s products, but at least they’re honest about it.  It’s just annoying that I can’t do all of my grocery shopping in one store (or even at one chain), especially with the vicious circle of fuelperks and foodperks and whatever other kind of perks they come up with next.

Interestingly enough, I just sent an email to all those with whom I’ve shared communication with in the past at Giant Eagle, but the “To” address was cut out of the original inline reply… so I have no idea which one actually got through.

I’m assuming they’d have to have an onslaught of messages in order to even consider carrying the Turner’s products.  If you’re so inclined, you can…
